Espresso! by PNW Cookie Co. to celebrate one-year anniversary with ribbon-cutting in Chehalis

Espresso! by PNW Cookie Co. is celebrating its one-year anniversary with a ribbon-cutting ceremony at noon Tuesday, Oct. 28, at 272 N. Market Blvd in Chehalis. The public is invited to join the celebration. During the ceremony, the drive-thru will be temporarily closed, but guests can enjoy complimentary samples.

While the espresso stand is new, PNW Cookie Co. has been baking gluten-free, soy-free and vegan cookies for seven years — producing about 10,000 cookies each month for clients ranging from Amazon’s corporate office  to local coffee stands. Its new location next to Chehalis City Hall initially opened with a playful twist as a “cookie stand that also serves coffee,” co-owner Alex Carpenter said in a news release.

PNW Cookie Co. is owned and operated by Alex and his sister Callie Carpenter, along with their mother Susan Carpenter. Callie, who also serves as the mayor of Bucoda, primarily manages the cookie company, while Susan oversees administrative duties and Alex manages operations. With a combined 22 years of experience at Starbucks, Alex and Callie call themselves “coffee masters,” but their approach is intentionally different.

“We focus on health and taste,” Alex said in the news release.



The Carpenters use clean, high-quality ingredients such as fruit purees and dye-free syrups without preservatives. They also roast their own coffee and even craft their own white chocolate for beverages. Dairy-free options like oat and almond milk are always available, though dairy can be requested.

The team chose to wait a year before hosting a grand-opening celebration, focusing first on refining product quality, service and the overall customer experience.

“Now that we’ve built customer trust, it feels like the right time to formally introduce ourselves to the community,” Alex said.

Espresso! by PNW Cookie Co. is open Monday through Friday from 7 a.m. to 4 p.m., with plans to add Saturday hours in the near future. The ribbon-cutting ceremony will be hosted by the Centralia-Chehalis Chamber of Commerce.
