Person in charge did not know cold holding temperature requirement and was not taking the steps needed to ensure safe cold holding. Discussed. (5 red)

Two food worker cards were either long expired or unavailable. Please correct within one week and develop procedures to ensure all workers, including new employees, maintain valid cards. (5 red)

Several potentially hazardous foods were cold holding between 42 and 50.7 F and must be kept at 41 F or below at all times. These were either discarded or moved to the walk-in. (10 red)

There was no digital thermometer available to measure the temperatures of foods. Please provide by tomorrow. A digital thermometer, not dial, is required to measure thin foods. (5 red)

Loaves of bread are stored uncovered. This is not allowed due to the potential for contamination, particularly by flies or other insects. The person in charge indicated that this is a corporate requirement. Please keep all loaves of bread covered or otherwise protected from contamination at all times. Similarly, keep foods in the prep coolers covered when not in use. (5 blue)

Red violations are those most likely to cause foodborne illness and must be corrected at the time of inspection. Blue violations relate to overall cleanliness and operational conditions and must be corrected by established deadlines or by the next routine inspection.

Any establishment receiving 40 red points or any red point item repeated within an 18 month period is considered a high risk and must be reinspected. An establishment that receives 75 red points or 100 total points (red and blue) on a routine inspection or 40 red points on a repeat inspection will have their food establishment permit suspended.
