Potentially hazardous foods were cold holding between 46.9 to 60.1 degrees F and must be kept at 41 degrees F or below at all times. These were either discarded or transferred to cool, based on time and temperature. (10 Red)

One food worker card was from an unapproved website, please correct within one week. 

The hot water is plumbed to the right on the front hand sink. Please either switch this so hot water is on the left or label. 

Produce is washed in the left basin of the three-compartment sink and hands are washed in the right basin, with the middle sink as a spacer to prevent cross-contamination. Lettuce was draining in the middle sink today. Please ensure all produce is kept in the left basin only. This was corrected. 

Please ensure all hot foods and foods that increase in temperature during preparation are cooled in 2-inch depths, uncovered until 41 degrees F.

Sauteed chicken was cooling in the walk-in refrigerator in 2- to 3-inch depths, covered at 61 degrees F. All potentially hazardous foods must be cooled uncovered in 2-inch depths until 41 degrees F or below. This is a multiple repeat violation. (25 Red)

Required operating plan detailing correct cooling procedures is still not being followed. This is a repeat violation. (10 Red)

Due to the fourth cooling violation in two years, the following will be required. At this time, the owners, as interpreted by their son, have requested reconsideration of these penalties, which will be presented to public health management: Two-day permit suspension, $250 fee for the repeated cooling violation, $250 fee for administrative meeting, two-year probation agreement detailing penalties for continued non-compliance.

Another reinspection will be required with associated $110 fee.

Red violations are those most likely to cause foodborne illness and must be corrected at the time of inspection. Blue violations relate to overall cleanliness and operational conditions and must be corrected by established deadlines or by the next routine inspection.

Any establishment receiving 40 red points or any red point item repeated within an 18 month period is considered a high risk and must be reinspected. An establishment that receives 75 red points or 100 total points (red and blue) on a routine inspection or 40 red points on a repeat inspection will have their food establishment permit suspended.
