Establishment is in the process of a remodel and is using alternative locations for food prep and service. There were initially no hand washing facilities set up in the service area (dining room) and there were dirty dishes placed in the sink in the prep area (activities room). These were both corrected. Please ensure hand wash sinks are always available and fully stocked with soap, paper towels and hot running water (100-120 F). (10 red)

Potentially hazardous foods were cold holding between 43.6 and 55.6 and must be kept at 41 F or below at all times. These were either discarded or adjusted to cool, based on time and temperature. This is a repeat violation. (10 red)

The establishment was not following approved alternative procedures required for operating during the remodel. This includes: (1) Conducting food prep in an activity room down the hall, which is also used by residents. (2) Using a hand sink for produce washing and (3) not providing separation between the remodel work and food and equipment prep and storage areas. A plastic barrier was replaced in the kitchen and the activity room will now be used only for food prep with no resident access. (10 red)

Chicken was thawing on top of the two-compartment food prep sink without being immersed in running cold water. This sink was also being used to story dirty dishes. Chicken (fully packaged) was moved to the walk-in and the sink was emptied and cleaned. (3 blue)

Although there was no major construction being done during the inspection, the kitchen and the air were still quite dusty, which poses a contamination risk to food, dishes and equipment. All uncovered food was discarded, all dishes and surfaces were cleaned and sanitized, and a plastic barrier was put up. (5 blue)

Red violations are those most likely to cause foodborne illness and must be corrected at the time of inspection. Blue violations relate to overall cleanliness and operational conditions and must be corrected by established deadlines or by the next routine inspection.

Any establishment receiving 40 red points or any red point item repeated within an 18 month period is considered a high risk and must be reinspected. An establishment that receives 75 red points or 100 total points (red and blue) on a routine inspection or 40 red points on a repeat inspection will have their food establishment permit suspended.
