Please use colander for produce washing instead of metal pan or container. Always clean and sanitize sink first (this is done.)

A large pan of shredded beef had been cooked this morning and was then covered with aluminum foil to cool in the walk-in refrigerator. Meat was in 3 to 4-inch depths and temperature was 82.4 degrees F after five and a half hours. Potentially hazardous foods must reach 70 degrees F within two hours and then 41 degrees F within the next four hours for a maximum of six hours. In addition, hot foods are left cooling at room temperature up to two hours without ice and without monitoring to ensure the above time and temperature requirements are met. Please ensure all potentially hazardous foods are cooled in 2-inch layers uncovered in the walk-in until 41 degrees F or below. Shredded beef was discarded.

A large pan of cooked beans (135 degrees F) and a large bucket of red sauce (45 degrees F) were being held at room temperature for use during the afternoon and evening with the intent to reheat them when supplies run low on the steam table. Since they were still at safe temperatures, beans were moved onto the burner for hot holding and sauce was placed back in the refrigerator. 

Overall, cold holding is much, much better and for this reason, I am waiving the requirement for an operating plan and associated $25 fee this one time. (25 red)

Any establishment receiving 40 red points or any red point item repeated within an 18 month period is considered a high risk and must be reinspected. An establishment that receives 75 red points or 100 total points (red and blue) on a routine inspection or 40 red points on a repeat inspection will have their food establishment permit suspended.
