Pizza has long been a tradition in Nick Delin’s family.
“Our family had a pizza restaurant on the eastside of Tacoma for over 20 years,” he said.
Delin also had his own pizza restaurant, Big Nick’s Pizza, in Tacoma, before medical issues forced him to sell it about 12 years ago. He spent some time working as an insurance adjustor, but now, he’s back in the pizza business.
Delin and his wife Amy opened Big Nick’s Pizza & Pasta about two weeks ago on Cedar Creek Drive just outside of Winlock, where they have lived since 2005.
“I always wanted to open another place,” he said. “I talked to some of the old timers. I kind of asked, ‘What’s needed around here?’ ”
Many gave the same answer — a good, local pizza restaurant.
“It’s been really positive — we haven’t really done any advertisement yet,” he said. “We’ve been getting steadily busier.”
Delin, 45, started cooking at his family’s restaurant when he was 14.
“We have a proven recipe — it’s the recipe I had in Tacoma,” he said. “There were a lot of family recipes from my grandma and uncle.”
Delin uses fresh ingredients and makes his own spice mix and sauce. The restaurant serves pizza as carry-out or take-n-bake and doesn’t yet have seating or delivery options. In addition to pizza, Delin offers salads, sandwiches and burgers.
“This has been a labor of love getting back into it and serving a decent product.”
So far, Delin said the combo and garlic chicken pizzas are his top sellers. The restaurant also has ice cream, candy, fudge and a selection of gifts.
“You can get a little bit of everything here,” he said.
In the future, Delin plans to also offer a variety of pastas including homemade lasagna.
“We try to make everything homemade as much as possible,” he said. “There isn’t very many hometown pizza places — there really isn’t.”
